Cooking Roasted Eggplant with a Warm Caprese Topping



 
We had planned on having family over for dinner but our kid caught the ‘vid.  So we quarranteed her and cancelled with our guests.  As we had already purchased the food, I made the dinner and made this video to show them what they missed.  The basic reciple is to roast the eggplant for about 1 hour or until done and then top with the sauce.
